I hate writing to people with whom I’ve had some contact, but not enough to determine their preferred level of formality. do I err on the one side and risk coming off as a stiff, overly‐formal bastard, or do I go the other way and risk looking like the stereotypically rude youth?

Walk the middle path as much as possible. Mix politeness with abruptness. That way, if anything, you'll come off as someone who doesn't know which they want to project. You may look foolish, but it has the best overall chances, given the circumstances. At most, most people would just be vaguely amused.
